Every August 29th, National Lemon Juice Day rolls around, and we take the opportunity to raise a glass (or a tagine) to the citrus that keeps our kitchen buzzing.

While fresh lemon juice is a staple, preserved lemons are the soul of many North African and Middle Eastern dishes we love to create. Tangy, salty, and deeply aromatic, they add an earthy citrus depth that you just can’t squeeze from a bottle.

We preserve our lemons the old-fashioned way: quartered and packed in kosher salt, topped off with lemon juice, and layered with spices like cinnamon sticks, bay leaves, and star anise. Then, we let time do its thing — slowly transforming the lemons into something mellow, complex, and utterly irresistible.
